I have read short books in one day, but I can't remember the titles offhand, to prove it to you.
I definitely can finish a novel that isn't that long, in one sitting, if I have enough time to dedicate to reading. Longer nooks tend to stick in my mind more.

If I am really into a book, I can start and finish it within the same day. I think my shortest time was maybe 4 hours of nonstop reading to finish a book.

I finished the Fifty Shades trilogy in two days. Was on holiday and had the whole house to myself. I only put my phone down when I needed to use the bathroom or to grab another snack.

The minimum time I used to finish reading a book would be a couple of hours. It was a short one of less than 50 pages.

The minimum time for me was a few hours depending on the book. For a short book, I would spend less than an hour.

The fastest would be a few hours to a day, depending on the length of the book. I usually prefer taking my time, though.

6 hours (talking about standard 300pages book). Then I felt guilty because it had been a present and I felt I hadn't given it enough time, so I read it again!
