Does anyone have recipes for squash to share?

I like to make a breakfast hash with diced up sweet potatoes, butternut squash, onions, and white potatoes. Sautee them in butter until tender, starting with the potatoes which take the longest to cook :)

I also cook spaghetti squash in the oven with olive oil, onion powder and garlic powder. Cut in half, drizzle olive oil over the halves, sprinkle with seasonings and bake at 400 degrees until tender. I either eat it plain or put sauce on it :)

I'm always looking for new ways to cook squash!

ROASTED BUTTERNUT SQUASH DIPPERS

TOTAL TIME
PREPS: 10 MINS
BAKE: 25MINS

MAKES
4 servings ( 2/3 cup dip)
Ingredients

1 small butternut squash (about 2 pounds)
2 teaspoons olive oil
1 teaspoon Cajun seasoning
1/4 teaspoon salt
1/4 teaspoon pepper

DIP:

1/2 cup sour cream
2 tablespoons maple syrup

Directions

Preheat oven to 425°. Peel, halve and seed squash; cut into 3x1/2-in. strips. Spread in a greased foil-lined 15x10x1-in. pan; toss with oil. Roast until tender and lightly browned, 25-30 minutes, stirring once.
Sprinkle with seasonings. Mix dip ingredients; serve with squash.

Nutrition Facts

1 serving: 208 calories, 7g fat (4g saturated fat), 20mg cholesterol, 303mg sodium, 34g carbohydrate (13g sugars, 8g fiber), 3g protein.

I am not a fan squash..but I am interested in the recipe above..I am going to give it a try later after work.
