It might sound boring but I'm about to make me some oatmeal, with soaked sunflower seeds & dates for breakfast 😋

That sounds delicious. I just started eating oats for breakfast. It's simple, but you can spice it up with seeds, fruits, and other things.

As for today, I cooked some chicken soup with rice vermicelli and some veggies for dinner.

Dinner: we grilled some jalapeño, onion and garlic hamburger patties. I like adding flavors to the hamburger. Lunch: I made some homemade chile rellenos in the air fryer. I poured some Stokes Green Chile sauce with pork and jalapeños over the top.

For dinner, I just arranged the nachos on the pan with cheese and another layer of nachos and more cheese. I arranged all the extra toppings on a platter and my husband and myself attempted to inspire my 4 y.o. daughter to try and taste some of it. My 10 month old loved the cheese-covered nachos just like they were. I was really apprehensive, but I think it went well as a no-cook dinner.

Today I just kept it simple and made some bread and eggs with a side of mashed potatoes. Easy, cozy, and always hits the spot!
