I like cucumbers, black olives, broccoli, spinach and lettuce, tomatoes (red and yellow) feta cheese, sunflower seeds and bacon. Either with a little Italian or a little ranch.

My favorite is cucumber, cherry tomato, red onion, red pepper, corn and purslane. Top with salt, pepper, olive oil and white wine vinegar.

1) homemade croutons (pop the bread into the oven with olive oil, salt, and hot pepper), lettuce/rucola, tomatoes, green olives and corn. Season with salt, olive oil and vinegar. You can add canned tuna or stir-fry some chicken and add it in there too to get your proteins, but I normally only make it with greens and have it as a side dish.
2) rice salad (Italian summer classic): boil some rice and let it cool down completely, then add pickled vegetables, corn, boiled egg and mayo. It's super refreshing during summer.
