The Perfect Vegan Breakfast

Post by Corina Elena »

For anyone looking for something filling, tasty and healthy for their breakfast :D

Boil some coconut milk with pieces of apple and oats, add in a teaspoon of peanut butter, a teaspoon of chia seeds, a little bit of maple syrup and a generous dash of cinnamon. I like to cook it until the apple pieces become soft.

If you try it, please let me know!

What amount of oats would you use? I need to get some coconut milk and try this!

Honestly, it depends. If you want to make it thicker, just put more oats. If you like your cereal with more milk, use more milk! My boyfriend loves when I "fry" the oats a little in the pan, without oil, of course, until they turn a little brown. It gives a smoked taste to the recipe.

This sounds awesome, I definitely need to try it! I actually really don't like coconut milk - can you recommend any good alternatives?

That sounds delish. I've got everything on hand except the coconut milk; have to get some. And I think I would leave out the chia seeds.

The recipe sounds absolutely delicious! I'll give it a try sometime. I usually don't add anything to my oatmeal -- I just eat it with egg, since I don't have much of a sweet tooth -- but I think it may be time for a change in routine.

I do exactly what you mentioned all the time. I think I’m going to have it now too.
