That will be aam ka aachar or pickled raw mango. You just slice the mangos in shape that you want, take the seed out season it with mustard oil and a lot of other Indian spices and keep them in sunlight daily for a month or so and viola you have your aam ka aachar.

To be honest, my favorite is raw mango. It is just awesome. For the second opinion, I would tell you mango milkshake how my mum makes it. It is just as delicious.

I love unripe mango with spicy vinegar or spicy shrimp paste or salt with chili,but it kicks back during the date of the month,and boy it hurts.
I also like dried mango, mango bango,mango float,mango shake,and the mango fruit alone.

Mango Float

It's like tiramisu.
In a square/rectangular container, stack Graham biscuits and put sliced ripe mangos in between.
Use cream and condensed milk to hold them together.
Freeze in the refrigerator.
Best served when cold.

Last summer I made a South Indian mango pickle that was pretty good. It was a little spicy, and I had to use this pungent spice known as Asafoetida.

I also like Mango sorbets, which is just pulverized mango mixed with simple syrup and put through an ice cream machine.

I like mangoes but I hate it in food. So basically, I can take mangoes alone, mangoes smoothie and mango ice cream.

There's something of a relish we have in my country called atchaar. It's chopped green mango, spices and vegetable oil. It's really good as a side to a meal, or even on top of bread and eggs, cheese and chips.

Cold Mangoshake is my favorite drink especially in summer. It's so yummy and tasty. All the dishes are my favorite.

Mango with fresh cream is divine
Mango shakes in the summer are love.
The pickle or achaar the people are talking about is kerry or unripe mango, right?
My grandma,(nani) use to make such amazing achaar, goes perfectly with daal, yum:)

Whenever we buy a box or two of mangoes, my sister always asks me to make a dish called โ€˜Aamrasโ€™ with puris. It's a dish where u take mango pulp in a mixing jar and add sugar and cardamom powder and some milk or fresh cream( optional) give it a blend in blender and there you are Voila!
