If you do by chance throw in too much, I have learned that putting potatoes in the dish (where applicable) can reduce the salt significantly!

We just measure it with our fingers. If it's something you can't necessarily sample, like raw meat, trust what the recipe says and then make a note while you're eating if something tasted off.
