Cooking Gluten Free

Hi all! My mom and sister need to eat Gluten Free. I've always loved baking so I've adapted to baking gluten free. I have some suggestions for anyone else with these restrictions/ and also I'm ALWAYS looking for new things to learn!
1. Pamalas Baking and Pancake Mix is a life saver. I can use it for almost any recipe that asks for regular flour. Only trick- the mix comes with rising agents within it, so you don't have to add those to the recipe.
2. A lot of gluten free folks can't eat oats, even if they say they are gluten free oats. So, leave these out of baking unless the person can handle it.
3. Flourless recipes aren't that bad! And you avoid the whole/ awkward gluten free flour panic.
4. Don't shy away from mixes! I know if you're like me... you like to bake from scratch. But don't be scared to use gluten free mixes for things when you get started baking! It will help you learn what to look for when looking.
I can come up with more if ANYONE is interested.... Also please leave me with some tips that I should know!
