What are some good egg recipes I should try?

I've been eating the basic lately and want to spice things up a little. What could be some must-have/ try egg recipes apart from the usually, omlettes and boiled eggs and things?

How about eggs with a tomatoes sauce (Shakshuka)?

You make a tomatoes sauce and cook it for 15 minutes. Then, you crack your eggs on top and cook it for another 5-8 minutes or until the eggs are done to your liking.

you can add sauted green peppers and onions it will taste even better

I add onions to the sauce. :)

Try Indian-style egg bhurji. Or even Indian style omelet; it's filled with onion, chilies, and some spices. Egg-fried rice is always a great option.

I often make a Spinach and Feta cheese omelette:

*1 egg
*Diced tomato
*Spinach
*Crumbled feta cheese

... and that's it. You can also add in some other veggies like diced onion or green peppers as well, but I like the simple version. I just make it in a non-stick pan with no butter at all, so it's very healthy!

You can try out egg stew.
Put a little oil in a saucepan
Add onions, green pepper, garlic, curry, and salt, and fry.
Add tomatoes to the mix and continue frying
Add the eggs and stir till ready
It should be on low heat.
Ready and you can eat it with bread, rice or pasta.

I like making kimchi omurice! Probably not as unique as the others, but it's still delicious to eat! You can also try Dan Bing (Taiwanese Egg Crepe Roll) they are quite versatile. I have seen them served with the basic eggs and ketchup all they way to them being served with chocolate!

I like to fry my eggs in the sauce though sometimes I
like it plain and it's really easy to make. Fry your sauce and when it's well-cooked aff your egg and stir.

I have a simple go-to egg recipe that is easy, flavorful, and decadent every time I make it.

Crack 2-3 eggs in a bowl, add milk (optional), and whisk with a fork.
Add scallions, diced ham, and shredded cheddar cheese.
Microwave for two minutes at 30-second intervals, and whisk after each interval until the desired doneness.
Season with salt and pepper to taste.

If you haven't tried french toast, this is your sign. I am not sure how others do it in outher countries, but in my country it is just a plain beaten egg with salt added to it. You then soak a bread in it and roast it on a pan. I love to make it more crispy instead of soft and spongy.
