We cooked mung beans with coconut milk and other green leafy vegetables. Super delicious.

Went simple today and everyone fended for themselves. I had to baked potatoes made in my air fryer. Then put butter and sour cream on them. Also had little bit of yellow cake with fudge icing.

I cooked some white rice and tomato stew which is a common staple dish in Nigeria. Today is Sunday too and if you’d ask any Nigerian the typical Sunday dish, they’d say this in a heartbeat !

Tonight, we are eating grilled pork loin with vegetables. I sauté onions, add cut Brussel sprouts, and then add sliced mushrooms. My husband grills the pork loins and asparagus on the BBQ. It is one of our favorite dinners! We make enough to have it for two nights.

A rice tomato dish. I changed the recipe because the original recipe was always unsatisfying to me. It was a good decision because I'm satisfied with my version.
