I made creamy mushroom pasta coz I’ve been craving it for days now. Tip: ensure you take that time out to fry your mushroom still golden coz it makes a world of a difference.

As an independent being today, I have had to coke my own lunch and dinner. Today, to challenge myself I cooked a grilled pork and saute it after and I mixed it with soy sauce and vinegar, and other relevant ingredients. So far, it tastes yummy.

Baby boy and I made mint choc chip cookies today. We bought the mix off of a local kid who was selling them to raise money for his school. It was very very minty. I already know my partner will hate them 😂😂 he has a very plain palette 👍

Today I prepared a brinjal-potato-onion vegetable using a microwave for cooking. I took 2 medium sized brinjals and 1 potato and cut them in 4 parts each. I kept them in a glass bowl and added 4 cups of water and cooked in microwave in medium heat for 12 minutes. I mashed it and kept aside.
I chopped one onion and mixed 1tsp oil, 1/4 tsp black pepper powder, a little salt, 1 tsp of local vegetable spices and heated it for 2-3 minutes in a separate bowl in microwave. Once done I mixed the mashed brinjal potato to it. The dish was ready.

My partner is the ultimate chef, which leaves me with little need to bake or cook. However, feeling inspired, I decided to whip up a batch of chocolate chip cookies, and oh my goodness, they turned out absolutely perfect! Here's the fantastic recipe I used:

Best Chocolate Chip Cookies

Ingredients:

1 cup (2 sticks) unsalted butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 teaspoon vanilla extract
2 large eggs
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups semi-sweet chocolate chips
Instructions:

Preheat your oven to 375°F (190°C).

In a large mixing bowl, cream together the softened butter, granulated sugar, brown sugar, and vanilla extract until the mixture is light and fluffy.

Add the eggs, one at a time, beating well after each addition.

In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Stir in the chocolate chips until evenly distributed throughout the dough.

Drop rounded tablespoons of cookie dough onto ungreased baking sheets, spacing them about 2 inches apart.

Bake in the preheated oven for 9 to 11 minutes, or until the cookies are golden brown around the edges. Be careful not to overbake; the centers should be slightly soft.

Remove from the oven and let the cookies cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.

Once completely cooled, enjoy your delicious homemade chocolate chip cookies!

Feel free to customize this recipe by adding nuts, different types of chocolate chips, or even a sprinkle of sea salt on top before baking. Happy baking! 🍪🍫
