Hi there! I made a tofu scramble this morning. I kept it very simple and had it on toast with vegan margarine and tomato sauce. Turmeric is an amazing anti-inflammatory and tofu is a high source of protein. Quick and easy to make! I find that firm tofu works best for a scramble.

For dinner I made: brown rice, steamed veggies sauteed, and added pasta sauce. I cooked mushrooms and marinated tofu separately until golden brown and added them to the veggies. It was so good! My kids even had seconds. It was easy and affordable and can also be frozen in bulk.

I made the school lunch for the kids today - tofu scramble, vegan bangers, vegan cheese sticks, and a sandwich each.

Once a week I wake up early and make my daughter pancakes for breakfast and she would like to take it to school for her snack. Today, however, I made lunch which entailed steamed vegetables, spaghetti, and lentils in a tomato sauce.

I haven't baked in eons. But I did cook pasta, tomato sauce with shredded beef. I'll be having the leftover for breakfast.

Hi! I made pasta today with only a couple of ingredients and it came out delicious! I made my bechamel sauce with soaked raw cashews, spices, and soy milk which I added to mushrooms and vegan mince. Easy and affordable!

Today I made two freezer meals - Italian Pork with Veggies. It is so very easy and it's great to be able to just grab one in the morning and toss it in the crockpot. Voila, when you get home, dinner is served. Or if you forget to throw one in in the morning, you can just as easily add one to the Instant Pot and dinner is ready in less than an hour. They last for 3 months or so in the freezer. A great time saver and only the pot and dinnerware to wash up afterwards.
