I'm from Trinidad and Tobago where our dishes are outstanding in flavour. Today I cooked rice and sauteed vegetables, mainly cabbages and tomatoes for a light fresh lunch.

Rice, spinach, and chicken w/ soy sauce, vinegar, & bay leaf. Added in some garlic. That's pretty much it!

Last evening, I converted as someone who is impartial to soup to a soup lover. I found a recipe for Chickpea Lemon Orzo soup that was absolutely delicious. My own spin included added shrimp, mushrooms and substituting half of the vegetable broth for mushroom stock. The result was that I ended up finishing Still Me by Jojo Moyes at my kitchen island while I slurped two giant bowls of this soup after work last night. It was absolutely delicious.

Original Recipe was for the Lemon Chickpea Orzo Soup from Simple Veganista (I didn't know that you couldn't post the actual link in forum posts so do a quick Google search and you'll find it)

*My additions/substitutions/omissions* - 1 pound of frozen raw shrimp after it had been peeled and sauteed in butter, plus 8 oz of baby bella mushrooms. Instead of only using vegetable broth, I used half veggie broth and half mushroom stock.

The result was a creamy, light but oh so tasty soup. It was even better after it had a chance to sit overnight.

I wanted to make a cheesecake but a whole quantity is always lying in the fridge so I found a delicious recipe for cheesecakes for two. It’s the ultimate deliciousness and you can make the cheesecake chocolate flavored and add any topping of your choice.
