I've been doing a lot of cooking. Made some cupcakes, and (of course) frosting. Baked bread, made cookies (found the most epic recipe for choc. chip cookies! So chewy!), made chili with cornbread.

Just been a very yummy time.

I tried making the Japanese exploding omelette today. It was actually much harder than I expected xD, like I thought I almost got it, but then when i cut it open, the egg wasn't runny enough huhu

Tonight was pizza night with all my favorite toppings. This is a special pizza I must add. The toppings include: ground beef, sweet peppers, mushroom, pineapple, onions, tomatoes, pepperoni and more! Yum yum yum! Home made pizzas are the best!

Today, my boyfriend and I made chicken curry using some "golden curry" mix he found at the Asian market. He also made rice! It was pretty good, except it tasted more like I was eating chicken noodle soup but with some other ingredients in it!

I have some other types of curry paste/sauce, so I'm looking forward to trying those out! If anyone has any suggestions for making curry, I am down to try them :)

Today i cooked these bites famously known in our country as *visheti*.

Ingredients: 3 cups of wheat flour, 1/2 tea spoon of baking powder, 4 table spoons of liquified butter, 2 table spoons of vanilla, half a cup of sugar, and water

Steps: 1. Mix flour, vanilla, baking Powder and oil
2. Make a dough, it shouldn't be very soft
3. Cut your dough into two
4. Roll the one dough and using the knife cut into very small pieces cubes of about half an inch
5. Do the same for the second dough
6. Put your pan on the cooker, poor some oil in it for deep frying
7. Oil shouldn't get so heated, fry your cut cubes until golden brown
8. On another pan, put half a cup of sugar and half a cup of water steer until the sugar syrup is thickened
9. Put in the fried cubes
10. Keep steering until dried while your cooker is off
11. Save your *visheti*

I was looking for a nice, healthy vegetarian meal and made some barbecue chickpea pitas. To make the pita filling, I put chickpeas, one red pepper, and an onion in a skillet with barbecue sauce. The full recipe I used is on the Epicurious website.

I made carrot cake. So simple but so rich and tasty. It's one of my favourites and I'd like to share my recipe with you.😊
INGREDIENTS:
2 cups all purpose flour (you can swap half out for whole wheat flour if you like)
1.5 cups sugar
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
3 cups grated carrots
1 cup vegetable oil
4 eggs

MAKING THE CAKE:
Stir dry ingredients together and add carrots, oil and eggs.
Beat with electric beaters until well mixed (approx 2 minutes).
Pour into a sprayed 9×13 baking dish, and bake at 325º F for 50-60 minutes.

MAKING THE CREAM CHEESE FROSTING:

3 oz cream cheese (half a brick)
1/4 cup butter
1 tsp vanilla
2 cups icing sugar (confectioner’s sugar

Beat cream cheese and butter and vanilla with electric beaters until well-blended.
Gradually add in icing sugar, a half-cup at a time, and beat into cream cheese until smooth and creamy.
Slather that frosting all over your cake, taking it almost to the outside edges of the baking dish.
