Plantain Egg Pie with custard

Plantain Egg Pie with Custard.
Yummy breakfast
Recipe for Plantain Egg Pie:

Fry eggs with vegetables of ur choice (onions, red, green and yellow peppers), scramble up d eggs and set aside.
Peel, cut and boil ripe plantain till properly cooked, mash it with a fork.
Roll it into balls with ur palm, then press it down to flatten.
Put d fried scrambled eggs on d mashed plantain and fold it into two to form a pie.
Use a fork to make shapes on it.
Fry d pie in hot oil till brown.
Serve with ur choice of beverage.

I absolutely love plantains, but only just discovered them recently, so I do not have a lot of ideas of how to use them in cooking. I will have to try this.

This recipe sounds so good! I really want to try this but I'm always confused on how to pick ripe plantains in the grocery store.

Excellent idea! I don't fry because of the cholesterol, but I'm going to try this baked. If I brush the top with whisked egg it should give it a good golden brown color. And because I love cinnamon with plantains, I'm going to dust it on there as well.

For the person asking about how to pick ripe plantains: Dark is better and tends to cook sweeter and softer. If it looks like a giant banana that has been sitting too long, it's a good plantain!

I have never even heard of plantain being cooked this way. Eggs and onions with something sweet does not appeal to me at all but the making of it is intriguing.
