COCONUT CANDY
1 medium coconut
200g Icing sugar

*Process*
1. Break and save the juice in your coconut.
2. Rinse and Grate the coconut with the back
(without scraping the back) .
3. Pour your coconut juice into a pot, let it boil
4. Add your icing sugar. Stir it for about 2mins then add your grated coconut.
5. Cover for 2 mins, then stir regularly till it starts to change colour and thicken (stick together) .
6. When you are satisfied with the colour, you can
put down and empty into a plate.

Some people prefer thiers almost burnt. While others are satisfied with just golden brown.

*Note*
Wash up your pot while its hot, because it's so difficult to
wash off if the pot cools.

Great recipe.
In our place we do something similar to this but without coconut water. Adding grated coconut to the sugar syrup.

Wow, thanks a lot for this recipe. So simple to make, with just 2 ingredients. Coconut candy was one of my favourites, growing up. It's been an age since I last ate it. With this recipe, I can make and enjoy it again.
