I'm Nigerian, from Ibadan precisely. I like 'Egusi' soup (melon seed soup) and 'Efo riro' (Vegetable soup). Efo riro is made with blended peppers and onions (you can also chop the onions), palm oil, locust beans, fish and/or meat, crayfish, etc. Basically, the same ingredients are used for the melon seed soup but the difference is the melon seed soup and methods of cooking. They are very popular soups throughout Nigeria. They can be eaten with Rice and other swallow foods such as Eba, Amala, Pounded yam, Semovita, etc

stoppoppingtheP wrote: 06 Sep 2017, 09:13 I have always heard of Jolof rice and it looks so good. Anybody know how this tastes, and how to make it?
Jollof rice is amazing when cooked right, (Nigerian jollof rice, to be precise). It tastes sweet, very slightly smoky, and spicy.
In summary, you make a paste out of tomatoes, peppers, and onions, add spices , and fry this paste with little bit of oil.
Then add previously parboiled rice to this paste and cook forsome time.
Simple.

I am from Mozambique and our traditional dishes consist mostly of greens, coconut milk, peanut milk and seafood. One of our main dishes is called matapa and it's made with yucca plant leaves, coconut milk and peanut milk. We also add crab to it. It is wonderful.

I come from the coastal region of Mombasa and here our secret ingredient is coconut.we like almost anything that has coconut in it and my favourite food is coconut grilled fish.its a very tasty dish that you can have with rice, ugali or even a traditional bread known as ‘mofa’.u first have to mix coconut milk with a little bitof tamarind and turmeric and let it cook on medium until it thickens. Then grill the fish on both sides and when its ready pour the paste on the fish and grill for 1 minute then turn the other side, repeat the step.server while warm.
That sounds yummy.
