I agree. It depends on what is being cooked. A half cooked potato is rough both texturally and on your digestion.
If I am cooking stir fry I start with the hardest veggies and finish light cooking the softer ones like green onions or bok choy.
My husband prefers his brussel sprouts soft but I like em crunchy! Nutritional value doesn't change unless you boil or burn em.
