I think fully cooked food has no chance of having any harmful microorganisms that could affect our body so I'm more into fully cooked food while I'm not sure that it's safe to eat half cooked food.

I like my vegetables al dente and I use the water I cooked the vegetables in to make the gravy, so we have a second chance of getting the water soluble nutrients.

I prefer nearly all of my vegetables to be raw. For the ones that need to be cooked, it depends on what the veggie is. I like my squash steamed and my asparagus slightly firm.

It is dependent on the vegetable and the method of cooking. For example: vegetables that have water soluble vitamins in them will be lost if you boil the vegetable. If you cook it a different method, the water soluble vitamins will remain.

There was a recent study that concluded some vegetables are nutritionally better raw and some are better half-cooked. Personally, half-cooked with some crunch left to them is my choice. The "boil it until it's grey" approach is pretty repulsive; I never want to see another serving of grey-green beans with boiled bacon bits.
