I am wondering whether your fish is raw or fried. I will assume it is fresh, raw (uncooked). I am hoping the tripe and scales have been removed and it has been scaled.
Clean it up with plenty of clean water, running water where possible. Wash around the gill area and the inside thoroughly
Cut up the sides, salt (and spice if you prefer) and drain
Heat oil in a sauce/frying pan large enough to accommodate the fish
Put in the drained fish and cook on law heat, turning as appropriate
Serve it up sizzling hot with salad or vegetable of choice

- Season the fish with salt, pepper and lemon to remove the stinky smell.
- Heat the frying pan and make sure it's hot. Put the oil and lower the heat. Drop pinch of water in the oil and when it sizzle, it means that it is ready and can put the fish in the pan.
- Remember not to increase the heat as it will not cook perfectly inside and out.
