Half a can of chickpeas blended with olive oil, salt, pepper and paprika (so basically a massive bowl of hummus), topped with curried cabbage.
So delicious, healthy, filling and affordable.

When I make a sauce for pasta, I make it with chickpeas or lentils.
Koshari, an Egyptian recipe, is a wonderful option to consider.
Vegetarian lasagnas are easy, as well.
We also eat a lot of steamed veggies like broccoli and carrots. Look up some cabbage recipes as that veggie is not only delicious and easy to cook with but also affordable.
