I was a vegetarian for over two years and it as during my college time also. I found that veggie burgers were a lifesaver. You can prepare them with so many different ingredients and styles. You can use black beans, chickpeas, lentils, etc. then add cheese, veggies, bread crumbs and create so many options. I love a chickpea Mediterranean burger or a black bean Mexican burger.

I eat vegetarian most of the time, but I'm not a purist. I eat fish two times a week. I try to follow the Mediterranean diet as well. Vegetarianism is suboptimal compared to a healthy diet which includes animal fat and protein.

Rice and pasta tend to be fairly cheap and you can learn to make lots of amazing sauces that go with them. I have been vegan for a while now and although it has been hard at the beginning to learn what to eat, now it is incredibly easy. I love ethnic food, so Arabic foods, such as hummus, falafel, their pita breads with zaatar (just look it up, there are many recipes), Mexican foods (I always have homemade frozen burritos in my freezer and I just pop them in the oven when I get hungry), Chinese and Indian recipes tend to be mostly vegetarian/vegan friendly because of their culture. I know it can be a little hard at the beginning but once you develop a few recipes you are comfortable with, the rest is a piece of vegan cake! :lol: Pinterest recipes helped me a lot honestly, just add "vegan"/"vegetarian" in front of any recipe you are craving and they will give you many alternatives.
Good luck and try to keep up the protein intake (legumes, nuts, and seeds, etc.).

Being an Indian I eat vegetarian most of the times, you can try a few simple Indian recipes. They are healthy and on budget.

Hi! I'm not vegetarian, but I love going veg once or twice a week!
One of my favorite meals are veggie wraps, they are super quick to make and are great for meal prepping (they can also be vegan).

Simply buy or make some pita bread, add some hummus, add some veggies and wrap-up.

My favorite ingredients to add are: roasted mushrooms, stir fried spinach, cucumbers, carrots, beetroots and almonds.
Possibilities are truly endless!!!

I have been following Minimalist Baker on Instagram and she has a lot of great vegan recipes. She has started to incorporate meat back into her diet but most of the recipes are vegan and delicious!

Going vegetarian is really hard. I stick to around 5-10% meat intake total, just because I can't give up all that wonderful flavor (only using organic, free range, grass fed when possible).

You can substitute any meat in any recipe with:
- fermented soy (tofu, tempeh, etc.)
- beans
- lentils
- mushrooms

I typically take a recipe that incorporates meat, and if I want to go vegetarian, just leave the meat out. Sub with one of the options above and you'll be all set.

You can try out Indian recipes or Asian for that matter. You can substitute meat in the mentioned recipe with vegetables for most of them. They are budget-friendly and healthy too when cooked properly.

You can try Ratatouille. It's very tasty and can be made in large batches to be reheated later.

I am vegetarian, but generally I don't cook for myself. I find it helpful that most food places these days have plant-based "meats" or other vegetarian options.

Homemade vegetable broth is a pretty solid recipe for me! You can customize it with various types of veggies, and add in any vegan proteins you like, ie. tofu. Oftentimes, I pair a bowl of broth w/ some brown or black rice too.
