The best thing about being vegetarian here in our area is that we have a vegetation camp here that we can easily buy a low cost vegetables that are fresh and healthy. Veggies like soy beans, kangkong, lettuce, cabbage and many other are easily accessible here. Hence, we are all prompted to be vegetarian.

Eating vegetarian is the best way to make someone fit and strong but there are only few doing this because they don’t like the taste and I’m one of them. However, it can be one of the healthiest ways to eat, because we know plant foods are loaded with nutrients to protect our health.

I'm loving all of the suggestions on this forum. I like to make veggie tacos with black beans, diced tomatoes, avocado, lettuce, salsa on a tortilla (and you can add in some vegan shredded cheese to top it off).

My son's girlfriend is a vegetarian and she loves to eat egg burritos every day! She makes them with just eggs and tortillas. But then she met my son, and now she likes the way he makes them, too. He adds chopped sautéed potatoes, tomatoes, onions, peppers, and cheese.

Try air frying your veggies, it will crisp them up and be delish. Also, I love couscous, rice, and pasta. Add some corn, sweet potatoes, black beans, etc. and you can have a great veggie recipe.

My favorite is lentil stew. It's cheap, and you can make endless variations. The combo I like best is lentil and sweet potato with curry spices.

Vegetarian pasta dishes are quite simple - tomatoes, mushrooms and garlic. Great combination.

I think perhaps cook what you’d normally cook and replace the protein with vegetables. Vegetable soups are very delicious.

I'm an omnivore, but one of the min meals that I prepare every week is vegetarian:
Half a can of chickpeas blended with olive oil, salt, pepper and paprika (so basically a massive bowl of hummus), topped with curried cabbage.
So delicious, healthy, filling and affordable.

BOSH! Also has amazing recipes, you can also find them on all social media platforms. All of their recipes are vegan and easy to make. I have found that if you make food in bulk and freeze it, you save money and also don't have to worry about meals for a couple of weeks or so. Chillis, curries, and soups are the easiest and cheapest!

With inflation hitting the supermarket here and us being vegetarian, we can sympathize here.

When I make a sauce for pasta, I make it with chickpeas or lentils.

Koshari, an Egyptian recipe, is a wonderful option to consider.

Vegetarian lasagnas are easy, as well.

We also eat a lot of steamed veggies like broccoli and carrots. Look up some cabbage recipes as that veggie is not only delicious and easy to cook with but also affordable.
