Does anyone like leeks or have any recipes for them?

Does anyone like eating the vegetable leeks? They look like giant green onions but have a very mild flavor. I really like their subtle onion-like flavor and tenderness. So far, I have only cooked leeks by steaming them until they are soft. If you like leeks, do you have any recipes you would like to share?

I absolutely love leeks! I use them anywhere you could use onions. I like them raw chopped up a salad, but my favorite use for them is in soups. The dark tops are good for making stock, and the lower parts are good as one of the vegetables on any soup. Potato and leek soup is particularly delicious! My kids like them in stir fries too.

I love salads and have them almost every day, so I'll have to try raw leeks in my salad. Potato and leek soup sounds wonderful!
