Since I started staying by myself, either a sandwich or noodle is the go to quick meal.

Spaghetti with meat sauce (or with chili, cheese and onions if we have some leftover chili in the fridge).

I love stir fry with rice noodles. I start my noodles boiling while I fry whatever veggies are in the fridge in oil and whip up an easy sauce of soy sauce, sesame oil, apple cider vinegar, brown sugar, garlic, corn starch, pepper, and a little maple syrup and coat the veggies in the sauce, then drain the noodles and mix them in with the veggies and sauce. It's so easy and there is also minimal cleanup.

Cubed chicken breast bites sautéed in a pan and tossed with black bean and corn salsa.I also make a version of this with sun-dried tomatoes in oil. I put a little of the oil in a pan to cook the chicken and then chop the sun-dried tomatoes and toss them in at the end after the chicken cooks. Yum
