What is your favourite thing to make in under 20 minutes?

I know lots of great recipes are quick and am always looking for things I can make pretty quickly if I’m having a busy day but just want to whip something up. I have done cupcakes pretty quickly but frosting them always takes me ages! Just wondering what everyone’s favourite quick recipes are.

Pasta is great! I love how easy it is to put some in boiling water and make a sauce and that’s it!

• Cook time: 20 minutes

Feel free to switch out the walnuts for pecans, the raisins for cranberries or candied ginger, and so on.
INGREDIENTS
• 1 cup of rolled oats
• 1 cup of all-purpose flour
• 1/2 cup brown sugar, packed
• 1/2 teaspoon of salt
• 1 teaspoon baking powder
• 1/2 teaspoon baking soda
• 1/2 teaspoon of cinnamon
• 1/4 cup of finely chopped walnuts, toasted
• 1/3 cup of raisins
• 1/3 cup of chopped dates
• 1 stick of butter (1/2 cup), melted and cooled
• 1 cup of buttermilk
• 1/2 teaspoon vanilla extract
• 1 large egg, beaten
METHOD
1 Preheat the oven to 400°F and grease a twelve-slot muffin tin or line the slots with paper baking cups.
2 Mix together the rolled oats, flour, brown sugar, salt, baking soda, baking powder, cinnamon, walnuts, dates, and raisins. In a separate bowl mix together the buttermilk, egg, vanilla extract, and butter.
3 Pour the wet ingredients into the dry mixture and stir together. Be sure not to over-stir as that will cause the muffins to develop too many gluten bonds. It should be thick and gloppy. About 10 seconds of stirring should do; just enough to barely bring the ingredients together.
4 Scoop into prepared muffin tray and bake for 20 minutes or until a toothpick comes out clean. Cool in the tray for a minute or two before transferring to a wire rack to cool completely.

Stir fry is a go-to quick meal. Throw together a variety of veggies, maybe chicken or shrimp. Quick, easy, delicious!

I either do that or fried rice. I just throw some rice in the pressure cooker while I chop veggies. When it's done, I cook it all up.

If I'm in for one of those nights where I don't really want to spend hours on a meal my go to is with Ramen Noodles stir fry. All I do is cook the noodles until they are almost done then I take them straight from the pot they are cooked in to a pan throw them in with some veggies and I sometimes add some chicken that I get from the frozen section with a little bit of butter and it takes less then 20 minutes to cook.

My go-to quick dish usually contains eggs. For example, a quick meal I make a lot and really love is:

-1 slice of bread, toasted
-laughing cow cheese triangle, spread on toast
-fresh spinach
-1 fried egg
-salt & pepper

Sometimes I'll toss other veggies on there, mashed avocado, tomatoes, sliced radishes, mushrooms, whatever sounds good. I also love to season with oregano. There's such a wide variety of laughing cow cheese to use as well. It's so easy to whip up. 10 minutes TOPS. And it's delicious. That runny yolk and the toasted bread with the creamy cheese and crunchy vegetables. Pretty tasty IMO.

We like sausage with peppers and onions for a quick meal. You can use Italian sausage, kielbasa, or beef sausage. If you want more, add potatoes or rice. Toss up a salad & enjoy. (Can be made for breakfast, lunch or dinner)

It's either a sunny side up egg + sausage that is half in two then add a little mozzarella cheese.
or a garlic egg noodle
