Looking for something that starts right from the very beginning. Nothing fancy- simple dishes that can be prepared with minimum ingredients.

For simple food that's delicious try Pati's Mexican Table by Pati Jinich.

This book: Romanian Recipes, Wines and Customs by Radu Anton Roman, has the best and tastiest recipes ever. Also, most of them are easy-peasy. You won't find a much more detailed book than this. The majority advertise that they can teach you how to cook, but they won't tell you how to stir, season, how to hold a knife, how to mix the ingredients in the ball, etc. This book is literally the most detailed one I have ever seen, even though it may not seem so from the title.
