For paranormal romance I'd suggest "The Mammoth book of Paranormal Romance". It contains a good deal of short stories involving romantic/erotic relationships or encounters with everything from vampires to selkies and then demons or wizards... You name it.
If not that then there are thousands of new, upcoming stories in the bit-lit genre (chick lit with a bite, as some say... :oops: ). Anyone of Charlaine Harris' Sookie-novels for example could include paranomrmal romance, although the whole vampire thing has begun to go overboard.

I'll look through my library and come back to you with more, I know I have some titles that would be good to round the whole genre up.
