What great non-fiction book can you recommend?

'Fast Food Nation' by Eric Schlosser.
This book begins in a funny style which I wasn't sure I'd get along with, but it improves, and I learned SO much from this book. It's really interesting and quite an eye-opener, and includes things which would ordinarily never have crossed your mind.
Bill Bryson's 'Made in America' would be a very close second. I also learned a huge amount about the American language and it's history. As someone moving to the States from the UK soon, it was fascinating and invaluable.
I recommend both!
