I'd probably go for Edith Wharton, Jane Austen, and George Orwell.
As for the living, I think it'd be really interesting to chat with Daniel Keyes (author of "Flowers for Algernon"). Even though I'm pretty sure that's his only book, I'd still be really intrigued to ask him about it.
