Aside from Leon Uris I can't think of any, though I'm sure there'd be one or two.

I have read the complete works from Liza Palmer, just finishing Nowhere but Home this week. Sure, she only has five, but they are fantastic!
I have read the Demon Trappers collection from Jana Oliver, and am on my way to completing her repertoire.
Janet Evanovich and Edgar Allen Poe are also on my list.
The odd bird on my list of completions is financial mentor Dave Ramsey. Outside of his children's/teens' activities, I have read all of his books, the original Total Money Makeover being my favorite.

I cannot think of any off the top of my head. I have read a lot of Grace Livingston Hill and I plan to read everything I can get my hands on that Dickens wrote. I may achieve that goal one day.

No sooner have I stated to have read all the books by Diana Setterfield, which only amounted to one - "The Thirteenth Tale" - than she wrote another one :D

Hmm, I don't think I have read all books written by one author, unless the author only wrote like one or two books I guess.

I have read close to all of Nicholas Sparks' books, I am missing his newest book "The Longest Ride," but am hoping to read that soon.
