How to preserve salsa

Post by Bighuey »

I have a question. I just bought a 5 gal bucket of tomatoes from some guy on the street, and what I was wondering, is if I make salsa from them is there a way to preserve it? I know how to make the salsa, but when I make more than I can use within a couiple weeks or so it goes bad. Is there a way to make it so it will keep?

Canning seems to be the most popular way of preserving salsa. A search turns up many recipes and techniques. Here is one on eHow.com:

Hope this helps.

That is a big help. I use the same ingredients, plus celantro and a little vinegar. I dont have equipment for canning, but Ill get a few bottles and try it. Thanks for the info.
