It is very plain, but the taste of the tomatoes comes out and it is a better taste than canned sauce. Fresh is the best. This summer, it is my goal to get my husband to love eggplant if it kills both of us.

I am considering putting up my recipe for DisneyWorld's Tonga toast - Bananna stuffed French toast.

I'm bored and have a recipe to share - Spinach Casserole. It's my favorite recipe. If you love cheese, you will no doubt love spinach casserole.

Spinach Casserole
2 x 10 oz. pkgs of frozen chopped spinach (thaw and drain before adding)
1 1/2 cups chedder cheese cubed
2 cups cottage cheese or ricotta (I haven't tried ricotta yet)
1/2 cup butter cut into pieces
1/4 cup flour
3 eggs beaten
Pinch of salt

Combine ingredients in a crockpot. Cover and cook on high for one hour and then cook on low for another 4-5 hours.

Bon appetit!

P.S.: Does anyone have any other recipes to share? I'm eager to try some new things.

I bet my boys would like that..I'll have to try it :P

I have some recipes too :D

For appetizers:

Sausage Balls
.....................
1 lb of hot or mild sausage (which ever you prefer) I do both :)
3 cups of biscuit mix (bisquick) works great
12 oz. of sharp cheddar cheese, (grated)

Mix all together. Roll into small ball size (little bigger than a marble)
Bake at 325 about 25 to 30 mins
Freeze what you don't use..always good for later.

Sausage balls are great for parties..guest always gobble mine down pretty quick

A tasty main course:

I dunno how many of you like pork..but it is a healthy alternative to beef..
but anyway here is a recipe for pork :) You can also substitute chicken or turkey :)
.................................................................................................... :D
Japanese Style Pork Cutlet
All the Ingredients:

1/2 lb of pork loin cutlets
1 and 1/2 cups of uncooked medium-grain white rice
6 eggs
2 yellow onions
chicken broth (2 cups)
mirin
soysauce
sugar
ginger
all purpose flour
kosher salt
black pepper
panko crumbs
olive or canola oil
scallions
..............................................................

Rice- cook rice as shown on the side of the box or package

For the sauce or broth (whichever you wish to call it):
(this will be the broth you pour over the cutlets after you cook them)

2 cups of yellow onion sliced
2 cups low-sodium chicken both
1/2 of mirin (sweet cooking wine made of rice and sugar)
1/2 soy sauce
2 T. sugar
4 slices of ginger

mix all together..simmer for 15 mins (until soft) in a saute pan- over medium low

Bread Cutlets In:

6 eggs lightly beaten (set aside..do not add anything else to the eggs)

Then in a second bowl mix together

1/4 cup of all purpose flour
1/2 t. kosher salt
Heavy pinch of black pepper

In a third bowl place

2-3 cups panko crumbs (panko makes the taste more authentic)

Now your ready to bread and fry the cutlets :)

First start by dredging both sides of each cutlet in flour mixture..then dip into eggs..followed by panko crumbs..then dip into eggs once more and then panko crumbs again.

Fry In:

1/4 of olive or canola oil...(smart balance brand of oil is excellent too)

Fry cutlets (browning each side) for 6-8 mins total..transfer to a cooling rack or set over paper towels to drain.

Place the pork cutlets on top of the rice..ladle with the sauce (broth)..top with scallions. :)

Bon Appétit!! :D

Suzy, heres one from the vaults that should interest you. No recipe from me. I can boil water without burning it most of the time.

I bought a couple cans of beans today, Ill give it a try.

I dont really have any recipes except for bachelor slop. Heres a simple one with a warning label, eat at your own risk.

for two people, use more stuff for a bigger crowd.

1 lb. hamburger
Onion
Jalipino pepper
Soy sauce or Wooster sauce
Oregano
Sage
dill pickle juice (optional)
Garlic
Elbow mac or seashell mac
Salt and pepper
Bottle of your favorite strong alcoholic drink
Ketchup or exotic flavor spaghetti sauce, Ragu or Hunts if youre cheap. Ketchup if youre really cheap.

Fry hamburger with chopped onion and chopped jalipino and add other ingredients amounts are up to you.
Add sauce when the stuff looks part way cooked, add mac (After you boiled it soft of course) cook until it looks done or starts to burn up.

Put on plate
Pour yourself stiff drink maybe several stiff drinks would be best. You might not want to go through this ordeal sober.
Enjoy!!!
