Yea Potato Skins - delicious
My mother RIP could not understand anyone eating potato skins - in her upbringing potato skins would have gone directly to feed the hens or into the pig swill ... funny how tastes change! I remember the first time she saw them on a restaurant menu - she couldn't understand they were actually going to charge for them !!!!!!!!!!!!!!!!!

HEEEheee, funny story Fran!....what would she think of the " Chicken-feet" that are a common sight in the supermarkets now?

The Chinese and Mexicans knew what they were doing !...........if you could get past the rather scary appearance of a similarity to " human hands " you'll be tasting the most delicious / rich STOCK, you've ever had in your life ( makes Veal stock taste like WATER )...best chicken soup EVER!

I never peel potatoes. I eat them peels and all.

Fran, my grandmother was like that too. She said peels would poison you. Grandmothers are like that I guess.

We were raised to believe that all the vitamins are in the peel/skins, so the only thing that was ever peeled was a banana...
