I am a useful item, shaped like a pipe, can be bought at a building supply store, and used to transport water.
I started in the belly of an ox.
Then I evolved to leather and then to PVC.
I am not a bladder.

You are so very close! A heart is a manifestation of this. So is a star. But probably the most recognized symbol is the one in the second clue.
