I was going to say The Impossible Dream from Man From La Mancha but it doesn't have anything to do with the color white. I guess one could say a star is white, but that word is not part of the song title.

Then there is the song Mr. White from Carousel, but that doesn't fit the other clues.

Just as I was ready to give up, as I was typing this post, it hit me ...... Edelweiss ? .... from The Sound Of Music ?

It's white and you have to climb high in the mountains to find it and it is the title to a song in the musical.
