I was going to say The Impossible Dream from Man From La Mancha but it doesn't have anything to do with the color white. Just as I was ready to give up, as I was typing this post, it hit me ...... Edelweiss ? .... from The Sound Of Music ?
It's white and you have to climb high in the mountains to find it and it is the title to a song in the musical.
