Interesting riddle. I'm working on it but nothing comes to mind yet.

Wine?
I guess it was necessary back in the day when drinking water was not safe. People drank wine or ale.

I like your reasoning. However, your answer is incorrect.

Is it a play on words: dying is the necessary evil, dye used to color clothing made of fruits?

WOW! That is some impressive thinking skills. It is a play on words, but not those words, unfortunately.

A necessary evil since prehistoric times, its contents SOUND fruity.
It has evolved from rock to paper to electronic.

Is it some form of art? Humans used to draw in rocks, then paper, and now computers, for example. But I can't guess the fruity part for the life of me.

Not exactly art, but you are on the right track.
The fruity part might be a homonym.

YES!
A calendar has dates(fruit) and it is a necessary evil!
