My easiest appetizer recipe that ALWAYS seems to please: Boursin Cheese stuffed mushrooms.

Use only the mushroom cap, saute for a few minutes in butter or olive oil.
Place mushrooms on a baking sheet (put foil under for easy clean up).
Fill with boursin cheese (there are so many wonderful flavors, take your pick).
Put under the broiler until cheese is melted and slightly toasted.

Everyone always raves about these, even when I insist it was the easiest thing to make!

My " go-to " appetizer in my " hostess /party throwing " days.....

Rumaki...bacon wrapped chix livers w/a water chestnut in the middle, a toothpick to hold it together, and voila, into the broiler /grill...

sweet n' sour for dipping sauce, w/plenty of garlic, tamarind and Ponzu...a tad of srirachi if you're so inclined...

Spring rolls
Hummus with bread or pita bread/chips
I like to make these cream cheese appetizers that are delicious. Basically cream cheese with dill on top wrapped in crescent rolls and baked at 375 for 5-10 minutes. So delicious!
Stuffed mushrooms are a delicious appetizer option, too!

Usually Mozzarella sticks, fried bologna and cheese, spring rolls. Lately it has just been anything without meat. This pregnancy is turning me into a vegetarian!
