As of tomorrow, we have been married a year and I am fairly sure that the hubby gets bored with some of my "normal" recipes. I love to cook, and have tons of great American/Italian and Mexican fare as well as some Chinese and curry.

Saurkraut soup - sounds gross but is yummy!
4c. chicken broth
1 can cream of mushroom soup
16oz saurkraut drained
8 oz fresh mushrooms sliced
1 potato choppped
1 onion chopped
1 polish sausage halved and sliced in half inch thick piece
2 T. apple vinegar
2-3 T. Dill Weed
In a crockpotstir together all ingrediants. 10-12 hours on low or un til all vegetable are tender. Sift off any fat prior to serving.
serve with a coarse bread.

Alice and Lil's Cucumber Salad for any occasion
Thinly slice cucumbers
one half onion per cucumber
slices must be paper thin
soak in heavily salted water over night
Drain cucumbers and let dry out
Mix 3/4 sour cream and 1 T. vinegar
Stir in cucumbers pepper to taste.

My g/f wants to know what type of apple vinegar you use in the Sauerkraut soup. Is it an apple cider vinegar? Or is it something else?

Hey Rowan,
I'm trying the Sauerkraut Soup recipe today. As I type it is slowly cooking in a crockpot in my kitchen. It smells so good. I have about another 5 hours until it's ready. I'll let you know how it turned out!

Cheater pasta sauce
I learned to cook from my ex-bf's mom - here is one of the best kept little secrets regarding italian food...
K.eep I.t S.imple S.tupid
2 cans plain tomato sauce
add anything that you like - i.e. sauteed mushrooms, onions, garlic, artichoke hearts or fresh roma tomatoes - I like capers and sausage
dash of salt and pepper
Let simmer until thick and you have really great sauce that no one is any the smarter

Authentic Bruscetta
6 firm roma tomatoes -cut into ring fingernail sized pieces
1/2 pd. fresh mozzerella - if it is in a brick and a plastic wrapper, it is NOT fresh - same as above
Sever sprigs of fresh Basil - take each leaf off the stem and roll the leaves up and cut into smaller pieces
GOOD Virgin olive oil
Fresh Italian bread sliced and toasted lightly
Chop all ingredients and mix together - coat with about 1/4 cup olive oil - after about 20 minutes serve on top of toasted slices - this is the best dinner on a hot day next to BLT sandwiches

It is very plain, but the taste of the tomatoes comes out and it is a better taste than canned sauce. Fresh is the best. This summer, it is my goal to get my husband to love eggplant if it kills both of us.
I am considering putting up my recipe for DisneyWorld's Tonga toast - Bananna stuffed French toast.
