I haven't heard of mashed cauliflower before! Now that is something, alright. 1) "Mashed" cauliflower -- which can taste exactly like mashed potatoes, so it's a great sub.
2) "Bare" oatmeal -- and I can add in some frozen berries, sprinkle a few walnuts and just a dash of honey.
3) Veggie chili -- this is a great one -- I eat this all the time. I do put a bit of shredded cheese on top, or if you are non-dairy you can use an alt.
... Those are a few suggestions in case anyone is trying to be a bit healthier with their comfort food!
