What do you put in your grits?

Having moved down South, I've realized that every restaurant has grits! Now I never had them till I came to NC, and I am trying out different variations on them. Breakfast grits I put in butter, maple syrup and bananas. For lunch, I have spiced them up with cajun seasoning and cheese. But there have got to be more combinations out there to try. What's your favorite way to have grits?

You can put eggs done over easy or scrambled and bacon in your grits.
