I did not exactly "cook" today.. more like prepped a delicious lunch!

What I used:
2 Cubed Medium Sized Tomatoes
1 Tablespoon of Bleu Cheese Crumbles (used Feta for the second bowl, both were equally delicious)
3 Chopped Basil Leaves
S & P to taste
Honey Dijon Balsamic Vinegarette

Vinegarette:
Dash of Balsamic Vinegar
1 Teaspoon Dijon Mustard
1 Teaspoon Grain Dijon Muster
1 Teaspoon Honey
1 Teaspoon Olive Oil
Pinch of Salt, Pepper and Garlic Powder

Directions:
Combine all ingredients in a bowl. Whisk dressing (taste!) and drizzle over veggies and cheese.

I ate 4 tomatoes from my garden today, happy Friday :)

I love food.. And talking about it.. Lol ... Today I made homemade scoop cake (like the kind at SAMs) and stuffed sausage Jalapenos wrapped in bacon!

I love Italian food. I think I was an Italian in a past life too. Mmmm spinach and feta ravioli yum!

I'm on a diet and eating healthier, so today I cooked mini flatbread pizzas! They consisted of grilled chicken, avocado, cilantro, sweet red peppers, topped with a chipotle ranch sauce. :D

For dinner today I baked a homemade casserole. I make mine out of fried beef, spaghetti sauce, the large macaroni noodles and then sliced velveta cheese layered on top. Then I bake it until the cheese is melted nicely and the way I like it. It's a quick meal that my entire family enjoys.

I cooked mashed potato's for the 4th time and I recommend making mashed potatoes on lazy days because you don't have to do much . And I baked a strawberry cake for my little sister . ?

Today for lunch I had some broccoli cheddar pasta. It was delicious! For supper, a nice summer salad with strawberries. :)

Today im just making some baked chicken wings.. my girls LOOOVE chicken.. plus i have a bunch of leftovers im trying to force them to eat.. lol

Haven't cooked today yet, but my plan is to make stuffed green peppers later this afternoon. I'll stuff as many as I can, eat one for dinner, and freeze the rest ;-) !

This thread is making me hungry!

For supper tonight, I sautéed zucchini, onion, basil, and parsley, all fresh from the garden, and topped it with shredded jalapeño cheddar. I ate a small pile of shelled peas on the side, also from the garden.

Cauliflower garlic mashed "potatoes" - You steam a cauliflower with a couple of cloves of garlic. Then put it in the food processor with some butter and a little bit of nutmeg and blend until it looks to be the consistency of Garlic mashed potatoes. It's really good and low in carbs.

I have been recently introduced into the stay at home mom career so I have been busy looking up recipes that one I understand and two that impress my husband. So on that note, of ' what did I cook/bake today'...this point nothing but I am researching kielbasa and what to do with it. Wish me luck!

I'm newly vegan so lately I'm preparing a lot more fresh food! Last night I did some stuffed peppers with quinoa, mango salsa, and corn! Yum!
