I've been cooking a lot of crock pot meals lately. I'm 39 weeks pregnant, living in Florida, so cooking on the stove or oven is not really something I am up for right now. I made a chicken and yellow rice recipe the other day that shocked me because it was delicious! My boys gobbled it up like Halloween candy!

I baked some muffins but I tried a recipe that I have never used before. It was recommended by one of my friends recently. However the first results were a total disaster, I had to repeat the process 3 or 4 times before I could get the desired results. After that I really enjoyed the fruits of my labour!

Lately I have been cooking basic chicken or meat meals with simply rice or pasta for my family. This can get repetitive so today I woke up feeling quite cheery and decided to take out some of my more unique ingredients to store something up. I am glad to say i made a tray of quesadillas using fried chicken tenders, marinara sauce and cheddar cheese to top. I also baked corn muffins filled with mixed beans and potato pieces. And than a pot of Alfredo cheese pasta as the side. It all came out to be quite delicious. Just happy for the change :)
