I have big plans this weekend! While I haven't done it yet today with work, I plan on making eggplant parm for dinner tonight. I also have a batch or two of chocolate zucchini bread in the works too! I also plan on roasting some summer squash with a little gouda sprinkled on top. I love this time of year with all of those garden fresh goodies! Last weekend I made homemade salsa and applebutter. If anyone is interested in any of these recipes, by all means, send me a message, I will gladly share. :)

I was going to try and make some chicken with watermelon salsa tacos, but my son put the chicken in the freezer instead of the fridge so I'm thinking maybe some breakfast for dinner?

Homemade Italian sausage manicotti, instead of pasta we made crepes to replace the noodles.....I know, sounds weird right. But it was actually amazing!

Oh my goodness, chocolate zucchini bread!? I have only ever had regular zucchini bread! I am so pumped to look up a recipe for this! That sounds amazing. Garden fresh is definitely the best!

Today for lunch, I made a chicken cordon bleu casserole. Its one of my favorite dishes since I love ham and Swiss. All of the ingredients together is heaven for me. :D

We just celebrated my son's 7th birthday. He requested cheesecake for his birthday rather than the normal cupcakes (I'm known as the "Cupcake Queen" amongst family and friends). I created 3 delicious cheesecakes for his party, all from scratch. New York Strawberry Swirl, Lemon Blueberry and Creamy Chocolate. They were a huge hit!

I made chili in the crockpot for my daughter and her friends-then realized I forgot to get treats for my dog maxx when I was at the store earlier.....I looked on Pinterest (to which i am just addicted. ADDICTED) and found a recipie for dog treats that were wicked easy. Plus he loves them so check it out-1 cup flour, 1/4 cup unsweetened applesauce, 1/4 cup peanut butter, 1/4 cup chicken broth. Roll it up into little balls on a cookie sheet and put into the oven youve already preheated to 350 for 18 minutes and I have a happy dog-you will too :)

Today, I tried cooking chicken Chow Mein, because I sincerely love Chinese food. I thought it would be a great idea to try it at home because it has been a while since my family and I have gone out to eat. I ended up adding way too much soy sauce into the frying pan, and the noodles ended up tasting excruciatingly salty. I think I'm probably going to stick to making peanut butter sandwiches and grilled cheeses next time. In our home, my mother usually does a lot of the cooking, so I never tried to step into the kitchen and learn how to properly make something on the stove. I'm 21, and that's honestly a bit embarrassing, so I am hoping all of that will change in due time.

I didn't bake or cook anything to today (besides my lunch but that's not important). However, I would like to share a small trick to making super moist banana bread. The secret is in the banana of course!

What I like to do is I take old bananas and toss them in the freezer because I don't like to waste food whatsoever. This way they'll stay fresh plus you get extra sweet bananas when you're ready to use them. When you defrost the bananas, this makes SUPER EASY to mash them up to put into the banana bread batter because they're really soft. You have to be careful when mashing though because your bananas will want to sneak out of the torture of your mashing fork and commit suicide on the floor.

To make your banana bread SUPER DUPER MOIST, add 2-3 extra bananas. If your banana bread pops out of the oven dry and crumbly, it's probably because there aren't enough bananas in your banana bread.

Since I have a bit of a sweet tooth, I also like to mix some dark chocolate chips. I love bananas and chocolate!

I baked some chocolate cupcakes.

Does anyone have any good recipes that involve significant use of honey? I have a lot of local honey and am looking for ways to eat it besides straight-up or on top of something.

You can bake a Honey cake or Honey Apple Cake.

Thanks! But does anyone know of entire cookbooks dedicated to honey recipes? I know there are maple syrup ones.
