I'm always looking for new recipes!! After much work I personally think I've perfected my Guacamole recipe!

2 Ripe Avocados
1/4 - 1/3 of a medium onion, finely chopped
1/2 - 3/4 of a medium sized tomato
1/4 cup of shredded cheddar cheese
8-10 Jarred Jalapeno slices (depending on how spicey you like it, you don't want too many as it can easily overwhelm the avocado)
A squeeze of lemon/lime juice. Doesn't have to be fresh.
A pinch of lettuce. Nickel size
Salt



Cut avocados in half, remove pit and scoop the fruit into a blender. Dice and add tomatos, onions, jalapenos, and lettuce. Blend well, add your lemon/lime juice. The juice keeps the avocado from browning so it isn't really necessary. Salt it like you would mashed potatos...and then salt some more.. taste...salt...
You can use a potato masher or a mixer, it will be a bit chunkier, but still tastes fantastic.


Serve! You can use it as a dip for chips, veggies or bread, for tacos, sandwich spread, mexican BLTs, with pork chops, breakfast burritos, toast, can be thinned and heated for a pasta sauce, or salad dressing - Get creative! It's always a good day for guacamole ;)

Ill have to try that. Im not much of a cook, but that looks easy. I have a simple recepie for taco sauce that is very popular here. I can even make this. Use chopped tomatoes and chopped onions, about half and half, and add some celantro, not much as it has a very strong flavor. Maybe a little garlic and salt, and a bit of habanero or jalipino pepper according to your taste.

Great idea for a thread. Here's my famous Sausage Balls recipe. If I show up at any kind of gathering without these, people get mad and want to know why. lol.

1 lb. sausage
8oz. shredded cheddar cheese
1 cup Bisquick
½ cup water

Pre-heat oven to 350°F
Mush sausage and cheese together. Add Bisquick and water and mix it up good.
Grease your pan. Roll out the sausage mixture into 1” balls. Put them about a inch apart in the pan. Bake for 10 minutes on each side or until good and brown.

Enjoy!

That sounds fantastic, do you have a dip or sauce for them or just eat them plain?

I think I'll have to try that sometime soon!! Though, I think I'll try oats instead of bisquick.

What kind of sausage do you use?

I use Neeses Country Sausage. I don't know where all it's available, but that's about all anybody uses her in the south. I prefer hot sausage, but it doesn't really matter. They're great with any kind.

We just eat them by themselves. I saw somebody dip them in ranch sauce before, but I've never tried it....

Frittata is a firm flat Italian omelette similar to a French quiche.

Asparagus Frittata serves 2, preparation time 10 minutes, cooking time 15 minutes. Great for healthy breakfast or gourmet snack.

Cooking oil
1 small (100g) red onion, thiny sliced
170g asparagus, trimmed, cut into 2cm lengths
2 eggs
2 egg whites
2 tablespoons low-fat cottage cheese

1. Preheat grill.
2. Oil small frying pan and cook onion over heat, stirring 1 minute. Add asparagus, cook, stirring for 2 minutes.
3. Meanwhile, combine eggs, egg whites and cheese in medium jug. Pour over asparagus mixture in pan. Cook uncovered for about 5 minutes or until Frittata is browned underneath.
4. To firm, place pan under grill for about 5 minutes to set.

Other ingredients like diced ham or sun-dried tomatoes can be used, can be served with tossed salad.

hehe. I use oatmeal in everything I do because it makes me feel better that it's slightly healthier :)

These recipes look awesome. I can't wait to try them.

Here's a good one with oatmeal...I don't know the exact measurements of anything though, I just guesstimate with everything I cook.

Mama's Famous BBQ Meatballs and Rice.

1 pound of ground beef
about I don't know 2 cups of oatmeal? just enough to hold the meat together when it's cooking.
1 whole bottle of Barbeque Sauce

Squish the beef and oatmeal together.
Roll into little balls about 1" each.
Cook in frying pan over medium high heat until they are browned on both sides and cooked through.
Drain grease off meatballs.
Return meatballs to pan and add the bottle of BBQ.
Let simmer 1-3 mins. stirring constantly. Doen't really matter how long, just till the BBQ gets good and hot.

Serve with plain white rice.

It's really good if you mix the BBQ Meatballs and rice together. Yummy.

I don't know... the stove is a very sensitive instrument. Don't want to blow the house up. :o
